Tortang Talong (Eggplant Omelette)

Here is one for our vegans/health nuts (nuts, get it) out there :)
Tartang Talong (Eggplant Omelette) Recipe, I had this while revisiting the Philippines and they were delicious and they brought back memories as I ate them as a child. We were poor so I guess we didn't eat them that often and I probably ate them because food is food but I don't recall if I liked them or not... however as an adult... these are great!
Tortang Talong is great on its own, eat it with rice, maybe bits of bacon (or on the side), sometimes ground pork is added but if you ask any Filipino ALWAYS WITH KETCHUP! I am not really sure why, to be honest... perhaps it's because I grew up in the States but I prefer mine without Ketchup.
Filipino Eggplant vs Your Eggplant
Here in America and probably other places around the world, eggplants look very different. They are probably skinny and about a foot long and are a lighter, brighter violet. In the Philippines, however, eggplants can be as big as my head. As fat as papayas, almost. So you see our ideas of what Eggplants look like can be very different! XD

Tortang Talong quickly became a favorite of mine as a breakfast/snack food after revisiting the Philippines I tend to enjoy this as a healthy breakfast. I am not a vegan so I like mine with bacon! As alway's I eat and make my homeland food as a remembrance of my life in an orphanage. As they say, don't forget where you come from.
